Tarator – Traditional Bulgarian Cold Cucumber Soup

Ingredients for 2 People

 200 g Bulgarian, Greek or Balkan yogurt
2 fresh cucumbers
5 ml of sunflower oil or olive oil
6 cloves of garlic
25 g walnuts
about half a bunch of dill
A pinch of salt and pepper to taste according to your preference

How to makeTarator – Traditional Bulgarian Cold Cucumber Soup

Peel the cucumber and cut into small pieces or grate on a large mesh grater.
Chop the garlic into small cubes or squeeze it out.
Chop the dill.
Put the cucumber, garlic and dill in a bowl and add the spices.
Add yogurt and mix the whole thing well. To dilute the mixture, add a little water and olive oil and mix again.
Put the soup in the refrigerator to chill, then pour into plates and garnish with a little dill and crushed walnuts.
