Estonian herring salad recipe
Ingredients for 6 servings
3 slices of salted herring
4 undersized beets
3 potatoes
3 carrots
3 pickled cucumbers
2 apples
2 hard-boiled eggs
1 spring onion with chives
half a cup of sour cream
2 tablespoons mustard
1 tablespoon lemon juice
salt, pepper

How to make Estonian herring salad?
Peel and cook the vegetables in salted water until soft – beets necessarily separately, so as not to color the other vegetables. Cool down.
Rinse and dry the herrings thoroughly. Peel the apples from the skin. Cut all the listed ingredients into not too small cubes. From cream, mustard, lemon juice prepare a sauce, which should be seasoned to taste with salt and pepper. Add to the salad and mix thoroughly. Arrange hard-boiled eggs cut in quarters and chopped spring onions on top. Chill in the refrigerator.
