Keftedes (Cyprus Style Meatballs)
Ingredients for 4 servings
250 g coarsely ground pork
250 g coarsely ground beef
1 grated large red onion
2 handfuls of coarsely chopped parsley
1 teaspoon coarsely chopped mint
2 teaspoons of flaky salt
2 teaspoons ground cinnamon
1/2 teaspoon coarsely ground pepper
1 teaspoon baking powder
2 large eggs
4 grated and drained potatoes
vegetable oil for frying
Optional: parsley and chervil leaves, for garnish

How to make Keftedes Cyprus Traditional Meatballs
In a large bowl, mix all ingredients (except oil). Set the mixture aside for 30 minutes (keep it at room temperature), and then form it into 16 cutlets (you should use 1 tablespoon of mixture for one small ball-shaped cutlet). Heat the fat in a frying pan (the oil layer should be 2?3 centimeters), put the kefteds on it and fry them for 10?12 minutes or until they are golden and fully fried. Then remove them from the pan, drain them on a plate lined with paper towel. Serve hot, garnished with parsley and chervil.
TIPS: A simple pilaf, fries and salad or salad dressing with olive oil will work well as a side dish. What is left over can be wrapped the next day in crusty bread.
