Cevapcici - recipe for the grill, oven and skillet
300 g ground pork,
300 g ground beef,
2 tablespoons of vegeta,
2 medium onions,
3 cloves of garlic (or 2 tbsp. granulated garlic),
1 tsp. sweet paprika,
1/2 teaspoon hot paprika,
a teaspoon of ground cumin,
1/2 teaspoon pepper,
1 tsp. marjoram,
salt to taste
How to make Croatian Cevapi /Cevapcici
Put both meats into a large bowl and combine well, using your hands.
Peel the onion, cut it into smaller pieces and blend it with a blender. Mix it with the meat.
Then add pressed garlic, as well as sweet and hot paprika, ground cumin, marjoram, pepper and salt. Mix everything thoroughly. The meat mixture should be quite thick and sticky to your hands. Put the so-prepared meat in the refrigerator for at least several hours, and preferably overnight.
After this time, from the meat mixture form oblong cutlets.
To grill them, stuff them on long toothpicks or skewers.
You can also bake them on a baking sheet or griddle, or fry them on a regular or grill pan. If you fry them, be sure to turn them and fry each side.
The finished cutlets should be firm and heavily browned.
